No Bake, Super Easy Granola Bars

I always love a no bake baking recipe as I tend to snack prep in bulk and it’s good to be able to make something whilst I wait on oven space. These granola bars tick every single box in snack bingo!

So these yummy, gluten free, no bake, bars take almost no time to make and can usually be done with things I already have in the pantry. You can tweak them to be vegan and dairy free too!

But if you want to make them really decadent I have tried Cranberries, Dark Chocolate and Macademia Nuts instead of sliced Almonds. I have also added the dreaded brewers yeast and flaxseed to make these  BOOBY BARS. . ( which obviously are for mummies only)

  • 1 3/4 Cups Quick Cook Oats (Or regular oats you have whizzed in the blender)
  • 1 Cup Thinly Sliced Almonds You can substitute with Sliced Trail Mix and Dried Fruit
  • 2/3 Cup Chocolate Chips
  • 1 Cup Unsalted Peanut Butter Or you can use Almond Butter
  • 1/2 Cup Honey
  • 1 1/2 Teaspooms Vanilla Extract

Instructions
  1. Line an 8 to 9-inch square baking tray with two runs of criss-crossed parchment paper, cut to size. In a mixing bowl, combine the oats, almonds, chocolate chips and cinnamon. Whisk to combine.
  2. In a separate bowl - measure out the nut butter. Top with ½ cup honey and the vanilla extract. Whisk until well blended. If you are struggling to mix, you can gently warm the liquid mixture on the hob or in the microwave, but make sure it’s cool before you pour it into the dry mixture or your chocolate chips will melt.

  3. Pour the liquid ingredients into the dry ingredients. Use a big spoon to mix them together until the two are evenly combined and no dry oats remain. The drier the mixture, the more firm the bars will be, so stir in extra oats if it seems wet.
  4. Spoon out the mixture to the prepared baking tray. Use your spoon to arrange the mixture fairly evenly and then use the bottom of a flat, round surface (like a jam jar) to pack the mixture down as firmly and evenly as possible.
  5. Cover the baker and refrigerate for at least one hour, or overnight. Use a sharp knife to slice the bars. For portability, you can wrap individual bars in plastic wrap or parchment paper. Bars keep well for a couple of days at room temperature, so keep what you need out and freeze the rest!
